Part of stackabletech/docker-images#1651

  • Update signal-processing stack to use nifi 2.12.0
  • Update signal-processing demo image to use python 3.12 and JDBC 42.7.13
  • Update data-lakehouse-iceberg-trino-spark stack to use nifi 2.12.0
  • Update nifi-kafka-druid-superset-s3 stack to use nifi 2.12.0

I'm having trouble building the demo image for jupyter on python 3.13.
I get errors like this:

It builds fine with Python 3.12.

It seems to be alibi-detect. It breaks on Python 3.13.

Edit: Seems to be a lower level lib: scikit-image 0.24.0. Python 3.13 support was added in December 2024 in 0.25.0.

I have raised an upstream issue: SeldonIO/alibi-detect#963

I can't test the other two demos until we replace minio with garage (like what was done in stackabletech/nifi-operator#1001).

I think we should merge this, and I'll do the minio replacement in a new PR.
